Fried Tofu With Fermented Tofu Sauce
Ingredients: – Tofu– L’andalusà extra virgin olive oil, minced pork, purple Shiso, red fermented tofu saucelight soy sauce, sugar, salt Method:1) Drain the block of tofu and cut them into thick slices, remove from the middle of every slice a small circle of tofu.2) Chop the purple Shiso, add the ground pork, salt, sugar and light soy sauce and mix them all together.3) Fill the circle of tofu slices with the well stirred ground pork.4) Heat olive oil in a wok, add Tofu and fry them until they turn to brown colour, add red fermented tofu sauce, light soy sauce, sugar and water and bring everything to a simmer until the Tofu turns to red colour. Finally, dry the sauce in the wok with a strong fire. Tips: 1) Tofu slices shouldn’t be very thick, otherwise it is difficult to mix the flavor of all ingredients.2) Press the ground pork to make it well filled into tofu to avoid dropping out during the cooking process.3) Fry tofu the side with ground pork first, then flip to fry the other side.4) It is important to use strong fire at the final of the process to make tofu tastier.
