Ingredients:
– Sausage, preserved pork
– L’andalusà extra virgin olive oil
– Vegetables: tomato, fresh mushroom, onion, garlic, rice, lemon, black pepper, basil
– White wine DEMBA white
– Salt
Method:
1) Dice tomatoes and fresh mushrooms.
2) Finely mince the onion, garlics and basil.
3) Heat L’Andalusà extra virgin olive oil in a wok, fry the onion and garlic.
4) Add tomatoes, fresh mushroom and basil and keep sautéing.
5) Add rice and stir them for 2 minutes, pour the white wine and after the smell of white comes out, add water, black pepper and salt.
6) Simmer everything for 20 minutes when the water is boiling
7) Add sausage and preserved pork to keep simmering for another 5 minutes, then add the rest of basil for 2 minutes with strong fire.
8) Finally add the lemon pieces.
Tips:
1) Preserved pork and sausage should be cut in similar sized pieces
2) Avoid adding two times of water.
3) Avoid stirring the rice after all ingredients has been added.
4) Dry the liquid inside the pan before turn off the fire.
